The Best Banana Loaf Recipe

 1 cup (250 ml) mashed, very ripe bananas
1cup (250 ml) granulated sugar
1/4 cup ( 50 ml) vegetable oil
1/2 cup (125ml) sour cream
2 eggs, beaten
1 1/2 cups (375 ml) all-purpose flour
1 tsp (5 ml) baking powder
1 tsp (5 ml) baking soda
1/2 tsp (2 ml) 
 
In a large mixing bowl combine bananas (I puree mine first in a blender or food processor), sugar, oil, sour cream and eggs and mix thoroughly.In a separate bowl, mix together flour, salt, baking powder, baking soda and salt.Add the banana mixture to the dry ingredients mixing until just combined.Pour into a greased 9″X 5″ (2 L) loaf pan and bake in a preheated 325 degree oven for 1-1 1/4 hours or until tester inserted in the centre comes out clean.

Cool in pan for 5 minutes before turning out onto a rack to finish cooling. Theseloaves freeze great and are even moister when thawed out.
